Any root vegetables eg carrots, cerleric fennel sweet potatoes potatoes
pumpkin wedges
tomato paste, olive oil, salt , pepper and rub over vegetables
pour over a cup of stock
Bake all above for 30 minutes
Add chickpeas dressed in harissa salt olive oil and continue baking
Once cooked serve with dressing and salsa and sprinkle with dukkah
