1. Preheat oven to 200°c. Line a baking tray with baking paper. Halve strawberries, or slice if large, and arrange on tray. Scatter sugar over and season with salt and pepper. Bake for 15 minutes or until soft and juicy.
2. Transfer strawberries with tray juices to a small food processor and process until smooth.
3. Add vinegar and process until combined. Gradually add oil, processing until combined. Stir in poppy seeds and serve.
