Ingredients

3 egg whites

250g icing sugar

400g roasted almonds (before roasting cut in 1/3 lengthise)

1teaspoon vanilla 

Pinch of salt

 

Method

  • Cut almonds into long quarters and roast. Then set aside to cool
  • Crack 3 egg whites
  • Add pinch of salt
  • Beat with electric mixer until it looks like snow
  • Put 1tbsp vanilla sugar in 250g icing sugar
  • Add to egg whites and mix with spoon
  • Add egg white mixture to cooled down almonds
  • Mix from the bottom to the top
  • Spoon onto baking tray
  • Bake in oven for 30-40mins at 150C

133g roasted almonds cut in 1/3 lengthwise 

1teaspoon vanilla

266g roasted almonds cut in 1/3 lengthwise 

1teaspoon vanilla 

Pinch of salt
