Lemon/Lime Curd

125g butter

grated zest of 3 limes and juice

3 60g eggs

1 egg yolk

1 cup caster sugar

Method

  1. melt butter first then add all remaining ingredients
  2. microwave mixture in short burst of 1 minute or 30 seconds stir in between 
  3. the mixture is ready when the stirring spoon is held up and run your finger down the back of the spoon the mixture should stay on the spoon and cleared strip remains clear
