Quiche Lorraine 1976

Pastry 

1 cup plain Flour

4 oz butter 

salt

water 

Sand flour and butter and add enough cold water to make a soft dough ..chill

 


Filling 

4 bacon rashers (cooked)

tomato sliced

Gruyere cheese 

2 eggs

1 teaspoon plain flour

pinch nutmeg

1/2 teaspoon salt

1/2 cup milk

1 cup cream 

1 tablespoon melted butter 

 


line a quiche dish with the pastry  ..chill

layer quiche dish with cheese the bacon and or tomato .

beat eggs cream, milk,  salt, flour, nutmeg and butter .

Strain mixture over cheese and bacon 

bake in mod oven till firm but still a little wobbly

Place
