Buttery Couscous

April 2021

350g couscous, rinsed and drained

400ml warm water

2 tablespoons olive oil

25g butter

 

 

2 tablespoons flacked almonds browned in 15g butter

Tip cousous into and oven proof dish

stir in salt and pour over water  stand for 10 minutes

using fingers rub oil into cousous to break up lumps and aerate

scater butter over and cover with foilor wetted greasproof

heat in oven for 15 minutes (180)

 

take cousous out of oven and fluff up with fork serve as a mound toped with almonds
