Spicy Kefta Tagine with Lemon

Keftas

450 g minced lamb or beef

1 onion grated

small bunckh parsely

1-2 teaspoons ground cinnnamon

1 teaspoon ground cumin

teaspoon ground coriander

1/2 cayenne pepper

sea salt and black pepper

 


Tagine

1tablespoon buttter

1tablespoon olive oil

1 onion chopped

2-3 garlic cloves crushed

thumb size piece of ginger

1 red chilli

2 teaspoons ground turmeric

small bunch coriander

small bunch mint

juice 1 lemon

1 lemon cut into wedges pips removed

to serve plain buttery couscous tossed with chilli and green herbs

To make the Keftas

  1. pound mince with knuckles in a bowl   kneed well
  2. add onoin parsley cinnamon cumin coriander and cayenne season with salt and pepper.. kneed well
  3.  shape into walnut size balls

 

Tagine

Heat oil and butter in tagine or heavy based casserole

Stir in onion garlic ginger and chilli saute until brown.

add turmeric and half the coriander and mint and pour in 300ml water

bring to boil the reduce to a simmer coverd for 10 minutes

carefully place keftas in liquid and poach for 15 minute cook well on all sides

pour over lemon juice and season

tuck the lemon wedges around the keftas and poach for another 10 minutes

sprinke with mint and coriander and serve with couscous
