Roast Beef with Beetroot Demi-glaze

  • beef eye fillets
    watercress or rocket to serve

Beet root Demiglaze  I made the demigazed then add to the beef pan once the beef was cooked and baked the beetroots in it for a further 15 to 20 minutes

2 bunches beetroots

40g butter

2 tbs olive oil

onion
4 slices pancetta or bacon rashers

  • 1carrots
  • 1 stalk celery
  • 2 sprigs thyme and parsley
  • 2 bay leaves
  • 2 large mushrooms
  • 4 cups beef stock
  • 1 teaspoon Vegemite
  • 2¬†teaspoons brown sugar
  • 2 tablspn plain flour (this was too much!!!!)
    1cup dry sherry (red wine or balsamic vinegar)
