Date loaf

  • 1 cup dates chopped
  • 1 cup walnuts chopped (optional)
  • 1 cup brown sugar lightly packed
  • 60g butter
  • 1 cup boiling water
  • 1 3/4 cups self-raising flour sifted
  • 1 tsp bicarbonate of soda
  • 2 tsp vanilla essence
  1. Preheat the oven to 180C.
  2. Put chopped dates and sugar in a bowl and then add sliced butter.
  3. Pour in boiling water, stirring until butter has melted completely
  4. Add vanilla
  5. Add bicarbonate of soda, mixing well. 
  6. Add sifted flour fold through
  7. Bake in a well greased loaf tin in a moderate oven for 45-50 minutes.
